Grandma's Borscht
This soup is my ultimate favorite winter comfort soup. A few years ago, my friend, Lina's Grandma came into town and made this soup. I immediately wanted the recipe! Its packed with flavor, veggies & comfort and I could eat it over and over again. I've tweaked the recipe to fit my families favorite flavors, here is the recipe below :
Grandma's Ukrainian Borscht (beet soup)
Ingredients
1 bay leaf
3 carrots, chopped
8-10 potatoes, chopped into cubes
1/2 container of veggie broth
1 head of white lettuce
1 large beet, chopped into slivers
1 large onion, chopped
1 can of beans
2 tablespoons of special seasoning mix (see below)
1/2 head of cabbage
1/2 head of cabbage
1 can of tomato paste
1 tablespoon of dill
1 tablespoon of parsley
Vegan mayo (optional)
Directions
*This soup is for a large group of people, I like to make it and then store it in the fridge and heat during the week.
- Boil water in a large pot, filling 1/3 of the pot with water. Add half a container of veggie broth and the bay leaf.
- Chop beets in slivers and add to the pot and bring to a boil.
- Chop the carrots into small pieces and add to the pot and brig to a boil.
- Chop the onion and add to the pot and bring to a boil.
- Chop the potatoes and add to the pot and bring to a boil.
- Boil mixture for 25-30 minutes until the potatoes are cooked.
- Add can of beans. I like using white beans or navy beans.
- Add special seasoning mixture.
- Chop cabbage and add to pot and stir mixture.
- Add one can of tomato paste and turn off the heat. Stir the mixture.
- Add dill and parsley, stir and let the mixture sit. The longer it sits the better flavor the soup has.
- Serve soup and add a spoonful of vegan mayo and sprinkle with more dill.
*** Special seasoning : 2 tablespoons nutritional yeast, 1/2 tablespoon onion powder, 1/2 teaspoon thyme, 1 teaspoon garlic salt, 1/4 teaspoon rosemary, dash of turmeric, dash of celery seed. Mix all ingredients.
