Vegan Garlic Mashed Potatoes
Vegan Garlic Mashed Potatoes
14 Potatoes (I like to use 2 potatoes per person)
16 ounces of organic veggie broth (I use half a container of broth)
1 stick of vegan butter (I use Earth Balance)
2 packages of vegan chive & garlic cream cheese (I use Go Veggie)
1 teaspoon of garlic salt
1 teaspoon of Himalayan pink salt
1/4 cup of veggie broth/water mixture from boiling the potatoes.
Vegan milk (add as much or as little as you'd like until thickness of mashed potatoes are perfect!)
Directions :
- Fill a large cooking pot with water 1/2 of the size of the pot. Then, add half a container of veggie broth. Bring to a boil.
- Wash & peel potatoes.
- Dice potatoes and add to boiling water.
- Boil for 35 - 40 minutes, until potatoes are easily smashed with a fork.
- Add butter, garlic salt, Himalayan salt & cream cheese to a standing mixer.
- Keep 1/4 cup of the broth/water mixture & drain the potatoes.
- Once potatoes are drained, add them to the standing mixer along with the broth/water mixture.
- Set mixer to 'stir' and mix until mashed.
- Add in milk, I use unsweetened almond milk, a little at a time until consistency of mashed potatoes are reached.
