Potato & Pea Curry
Potato & Pea Curry
1 tablespoon of coconut oil
3-4 cloves of garlic, minced
1 medium onion, diced
4-5 small potatoes, diced
1 cup of tomatoes, diced
1 can of coconut milk
1 cup of frozen peas
1/2 teaspoon of coriander powder
1 teaspoon of curry powder
1 teaspoon of turmeric powder
1 teaspoon of nutritional yeast
1 teaspoon of Himalayan pink salt
Directions :
- Add coconut oil to a large saucepan on medium heat.
- Add minced garlic and cook until you smell the garlic.
- Add diced onion and cook until they start to turn translucent.
- Add diced tomatoes.
- Add coconut milk and bring to a low simmer.
- Add potatoes and cover saucepan and cook until potatoes are soft, 12-15 minutes.
- Mix in frozen peas and let sit for 10 minutes.
- Mix and serve.
