Potato & Pea Curry

Potato & Pea Curry

1 tablespoon of coconut oil
3-4 cloves of garlic, minced
1 medium onion, diced
4-5 small potatoes, diced
1 cup of tomatoes, diced
1 can of coconut milk
1 cup of frozen peas
1/2 teaspoon of coriander powder
1 teaspoon of curry powder
1 teaspoon of turmeric powder
1 teaspoon of nutritional yeast
1 teaspoon of Himalayan pink salt

Directions :
  1. Add coconut oil to a large saucepan on medium heat.
  2. Add minced garlic and cook until you smell the garlic.
  3. Add diced onion and cook until they start to turn translucent.
  4. Add diced tomatoes.
  5. Add coconut milk and bring to a low simmer.
  6. Add potatoes and cover saucepan and cook until potatoes are soft, 12-15 minutes.
  7. Mix in frozen peas and let sit for 10 minutes.
  8. Mix and serve.
