Garlic Brown Rice

Garlic Brown Rice

3 tablespoons of Earth Balance Butter
10-12 cloves of garlic
2 cups of brown rice
4 cups of water
4 green onions
Himalayan salt to taste

  1. Heat a large pot on low heat and add butter.  Let it slowly melt.
  2. Chop garlic and add it to the melted butter and fry for 4-5 minutes until the garlic is crispy and golden.
  3. Turn off heat and take the garlic out and place on a plate lined with a paper towel.
  4. Heat the same large pot to medium and add rice into the butter.  Stir to evenly coat all of the rice with the butter.  Cook for 1-2 minutes and stir often.
  5. Add rice and butter mixture to rice cooker.
  6. Add 4 cups of water and cover with a lid and turn the rice cooker on.
  7. Once the rice is done, let stand for 5 minutes.
  8. Chop the green onion.
  9. Open the lid to the pot and stir the rice, fluffing it up. 
  10. Serve while the rice is hot and add the green onions, salt and crispy garlic.
